-Muffins au chocolat blanc-

Tried making these for the second time today.

The first attempt was disastrous and when Clark tried to eat it using a plastic fork, it broke! It was so hard that Jeremy Chng had no idea how to eat it. Sigh...Ming said it was nice cos it tasted like a scone-which is basically harder than what a muffin is supposed to be.

Felt rather dejected but then again I was still left with 300g of Varlhona chocolat-which means at least 3 more attempts.

So it was with trepidation that I attempted the recipe again. Decided not to buy the same yogurt again but used whatever flavoured yogurt was in the fridge. It happened to be blueberry. That's why when they were baking there was a nice aroma of blueberry which slightly masked the white chocolat.

Also instead of giving the eggs a light whirr, I decided on a full blown whisking courtesy of my Kenwood mixer. This time I made sure my eggs were a light fluffy yellow before pouring them into the flour mixture.

Yet the mixture still reminded me of the dry sticky dough I had ended up with last Friday. Looked through the recipe again. Oops. I had forgetten to add in the melted butter. A frantic whisk of the butter was all it took for the mixture to look more like batter. Phew!

I wouldn't say I'm 100% pleased with the result but at least it is more palatable now. Ah anyway the comments will come later when I meet my friends for dinner later. ;p
